Mako dake is the enlarged stem part of the Mako plant, a member of the grass family. It is a food containing protein, dietary fiber, vitamins, and minerals, and is an excellent source of various physiological functions. It is especially ideal for building a healthy body because of its dietary fiber, which is known as the sixth nutrient and is found in vegetables, fruits, seaweed, and mushrooms.

Bamboo grass is a perennial grass of the grass family that grows in ponds, swamps, and other water bodies. In autumn, it produces rice-like fruits. The fruit is the enlarged stem of the water bamboo plant. Bamboo grass is native to East Asia and is a member of the reed family. It looks like a large rice plant and can grow to a height of more than 2 meters. A fungus called kurobokin (black ear fungus) grows on the stem of the water bamboo and enlarges the base of the stem. This is called "Mako-dake" and is eaten as a food.

We use only this "strawberries" as vegetables in our autumn shabu course.
