初夏の訪れを感じさせる食材、「いちぢく」の紹介です🥭

いちじくの旬は初夏の6月頃～秋の11月頃で、年に2回あります😀

いちじくの夏と秋の味を比べると、夏のいちじくは水分を多く含みあっさりしたフレッシュな味わいです。 加熱すると甘みが増し濃厚な味わいになります🤤

いちじくには、水溶性食物繊維のペクチンや、カリウム、カルシウム、マグネシウム、鉄(鉄分)などのミネラルが豊富に含まれています。 また、女性ホルモンに似た働きをする植物性エストロゲン、たんぱく質を分解する酵素フィシン、ポリフェノールの一種であるアントシアニンが含まれています🤔
