本日は人気のお肉の盛り合わせ
『極みコース』の紹介です😀

・松坂牛モモ肉

・希少部位のザブトン

・A3ランク黒毛和牛のリブロース

牛だけを使用した贅沢な盛り合わせです🐄

松坂牛は三重県産のA-5ランクのモモ肉を使用をしいてその中でも、ランプと外モモの2種類の部位を使います。 

(日によってモモ肉の部位は変わります)

ランプはモモ肉の中でも柔らかく、脂身の質が良い所です。

外モモはしっかりめの食感で、味が濃く、脂身の少ない所です。

サブトンはA-5ランク黒毛和牛の肩ロースの部位で、その中でも牛１頭から、わずか数キロしか取れない希少部位で、柔らかく、サシは感じられますが、クセの無い部位です。焼肉では特上ロース、特上カルビとして使われています。

黒毛和牛リブロースは、A-3ランクを使用し、脂身と赤身のバランスが良い物を仕入れています。きめが細かく、柔らかく、上品な味わいです。
