本日は当店自慢のポン酢の紹介です😙

銀座しゃぶ通のポン酢はゴマだれ同様、手作りで作られております。ポン酢も『若月宇三郎』の手によって作られたものです。全国を飛び回りしゃぶしゃぶに合う柑橘を探し、たどり着いたのが山口県萩の柑橘でした🍋
山口県は温暖な気候で柑橘が育つ場所には適しています。そんな山口県萩産の柑橘、夏みかん、スダチなど数種類を皮ごと搾り、香り高い果汁に醤油、酒、みりん昆布、鰹節などを加え2ヶ月以上寝かせ酸味がまろやかになった頃合いをみて提供しています。お酢を使わず数種類の柑橘を使っています🍋🍊🥭
口当たりがとても柔らかな酸味なのでしゃぶしゃぶはもちろん、せいろ蒸しとも相性が抜群です😀

For the peace of mind of our visitors, we have installed a CO2 concentration measuring device and provide rubbing alcohol for disinfection.

Employees also take their temperature three times a day, wash their hands frequently, disinfect with alcohol, wear masks, and take good care of their physical condition.
