Matsuzaka Beef

Black Wagyu beef ribeye
A luxurious platter using only beef 🐄.
Matsuzaka beef is made from the thigh, of which two parts are used: the rump and the outer thigh.
(The part of the thigh meat changes depending on the day.)
Rump is the tender and fatty part of the thigh meat.
The outer thigh is firm in texture, rich in flavor, and where there is less fat.
Subton is a rare part of the shoulder loin, of which only a few kilograms can be obtained from a single cow. It is used in yakiniku as special loin and special ribs.
We procure A-3 grade Japanese black beef ribeye with a good balance of fat and lean meat. It has a fine texture, tenderness, and elegant taste.
