🐄松坂牛はモモ肉を使用をしいてその中でも、ランプと外モモの部位です。

ランプはモモ肉の中でもサシがが入り、柔らかいく、赤身のとのバランスが良い部位。

The outer thigh is firm in texture, rich in flavor, and where there is less fat.

🐄サブトンは肩ロースの部位で、その中でも牛１頭から、わずか数キロしか取れない希少部位。柔らかく、サシは感じられますが、クセの無い部位です。焼肉では特上ロース、特上カルビとして使われています。

🐄黒毛和牛リブロースは、A-3ランクを使用し、脂身と赤身のバランスが良い物を仕入れています。きめが細かく、柔らかく、上品な味わいです。
