・A3ランク黒毛和牛のリブロース
A luxurious platter using only beef 🐄.
松坂牛は三重県産のA-5ランクのモモ肉を使用をしいてその中でも、ランプと外モモの2種類の部位を使います。
(The part of the thigh meat changes depending on the day.)
Rump is the tender and fatty part of the thigh meat.
The outer thigh is firm in texture, rich in flavor, and where there is less fat.
サブトンはA-5ランク黒毛和牛の肩ロースの部位で、その中でも牛1頭から、わずか数キロしか取れない希少部位で、柔らかく、サシは感じられますが、クセの無い部位です。焼肉では特上ロース、特上カルビとして使われています。
We procure A-3 grade Japanese black beef ribeye with a good balance of fat and lean meat. It has a fine texture, tenderness, and elegant taste.
