Matsuzaka beef thigh

A3 rank black Wagyu beef ribeye

A luxurious platter using only beef 🐄.

Matsuzaka beef, which is A-5 grade beef from Mie Prefecture, is served on the thigh, and two types of beef are used: rump and outer thigh. 

(The part of the thigh meat changes depending on the day.)

Rump is the tender and fatty part of the thigh meat.

The outer thigh is firm in texture, rich in flavor, and where there is less fat.

A-5 grade sablon is a rare part of the shoulder loin, of which only a few kilograms can be obtained from a single cow. It is used in yakiniku as special loin and special ribs.

We procure A-3 grade Japanese black beef ribeye with a good balance of fat and lean meat. It has a fine texture, tenderness, and elegant taste.

For the peace of mind of our visitors, we have installed a CO2 concentration measuring device and provide rubbing alcohol for disinfection.

Employees also take their temperature three times a day, wash their hands frequently, disinfect with alcohol, wear masks, and take good care of their physical condition.
