The vegetable introduced today is Kintoki carrot, a vegetable from Kyoto, Japan. It is redder in color than ordinary carrots. It is included in the winter shabu vegetables for dinner.
Kintoki ginseng, also called "Kyo-ninjin" (Kyoto carrot), is the only remaining variety of the oriental variety introduced from China. It was cultivated and eaten in western Japan before western carrots. The sound part is about 30 cm long, bright reddish-red in color, and is characterized by its conical shape, which is thinner than a normal carrot. Compared to Western carrots, its flesh is softer and sweeter. On the other hand, it takes longer to cultivate and has a shorter harvest period than Western carrots, requires high ridges, and is difficult to grow because the roots tend to split easily.
The meat that goes well with the soymilk broth is carefully selected from 12 varieties, including top-quality Matsusaka beef, fine-textured Kurobuta pork from Kagoshima Prefecture, and colorful root vegetables that cannot be missed as a winter delicacy.
