The vegetable introduced today is enoki. Please enjoy it in a shabu-shabu pot.
The enoki mushroom is a species of mushroom in the family Tamaritaceae. The fruiting bodies have long been considered edible, and are also called enokidake, nametake, namesuki, and saxifrage, and especially the edible ones are often called by the contraction "enoki. 
Shabu-shabu is available only in autumn.
