Traditional Sesame Sauce
Ginza Shabu-Dori's sesame sauce was created by one chef. He is now 95 years old, but he still has a strong spirit of inquisitiveness for cooking, and continues to stand in the kitchen and enthusiastically instruct young chefs.
The sesame sauce is made with more than 20 kinds of seasonings selected by Mr. Wakatsuki through trial and error, and the taste, which has never left the restaurant, has been kept unchanged for 49 years since its establishment.
When served, roasted sesame seeds are ground with a mortar to enhance the aroma and flavor of the sesame seeds, and the sesame sauce is added to the sesame seeds.
The sesame sauce is highly addictive, and once you try it, you will want to try it again. It goes well not only with shabu-shabu and seiro-mushi, but also with rice, and many customers come back for more sesame sauce.
I myself love sesame sauce and have tried many different kinds of sesame sauce, but I have never found anything better than this sesame sauce.
