A winter shabu-shabu course specializing in beauty and health, served in a mellow soy milk-sake lees broth.
To finish off the meal, we offer either Soy Milk Sake Kasu Cheese Risotto or Soy Milk Sake Kasu Sesame Sauce Dare Dandan Noodles.

冬しゃぶに使用している「酒粕」は東京駅構内グランスタB1にあります《はせがわ酒造》さんよりご提供いただいています。
店内を酒造として一からお酒の製造を行い「東京駅酒造場」としてBARカウンターでそこの酒造でできたお酒を飲めるお店です。

こちらの酒粕は通常の酒粕の様な板状の固いものとは違い「吊るし漉し」という自然にドリップしていく方法で、ヨーグルトの様な状態になり日本酒感が増します。
この様な状態なのでそのまま豆乳と合わせて使うことができます。
