     Thoughts on Sesame Sauce and Ponzu Sauce"

Today, we would like to introduce our signature ponzu (Japanese citrus juice).

Ginza Shabu-Dori's ponzu is handmade, as is the sesame sauce. Ponzu is also made by "Usaburo Wakatsuki". He traveled around the country looking for citrus fruits that would go well with shabu-shabu and found citrus fruits from Hagi, Yamaguchi Prefecture. The citrus fruits grown in Hagi, Yamaguchi Prefecture, including summer oranges and sudachi, are pressed from their peels, and the aromatic juice is mixed with soy sauce, sake, mirin (sweet sake), kelp, dried bonito flakes, etc., and left to mature for at least two months. The acidity of the juice is mild, and when the time is right, it is served.
