A winter shabu-shabu course specializing in beauty and health, served in a mellow soy milk-sake lees broth.
To finish off the meal, we offer either Soy Milk Sake Kasu Cheese Risotto or Soy Milk Sake Kasu Sesame Sauce Dare Dandan Noodles.
The sake lees used for the winter shabu-shabu is provided by the Hasegawa Sake Brewery, located in Gransta B1 in Tokyo Station.
The store is a sake brewery that manufactures sake from scratch and serves sake made at the Tokyo Station Sake Brewery at the bar counter.
Unlike regular sakekasu, which is hard and plate-like, this sakekasu is made by a natural dripping method called "hanging straining," which gives it a yogurt-like state and increases the sake-like quality.
It can be used with soy milk as it is in this state.
